Two Great Weight Loss Salads for the Desk Job Workers

This is a great salad. It's fresh, light and packed with flavour. If you're feeling s little adventurous, and you want to go and find it, adding some raw vegetables to it like pea and apple eggplant, cabbage and snake beans, best found in Asian markets.

150gm piece of eye fillet or scotch fillet

Oyster sauce and sweet soy sauce

2 stems of spring onions, sliced thinly

1 Lebanese cucumber cut in half and sliced thinly lengthways

6 - 8 cherry tomatoes, halved

½ bunch mint

½ bunch coriander

1 stick of lemongrass sliced finely

1 red chilli, julienned

100gm crushed peanuts

2 tbsp roasted rice (optional)

For the dressing:

Juice of two limes

Fish sauce to taste

Sweet chilli sauce

Chilli powder - optional

2 tbsp white sugar

Rub beef with oyster and sweet soy, leave for around 10 mins then sear in a hot pan till medium rare or to your liking and rest. Mix remainder of salad ingredients together and set aside. Slice beef thinly and add to salad.

For the dressing, mix ingredients together in a bowl. The taste should be hot, sweet, salty, and sour. I have deliberately left the amounts up to you, as everyone has their own tastes.

Again, if you're preparing it for a next day, make sure you don't dress it till you need to eat it. It's the freshness of this salad, as with most, that is most important.

For the roasted rice, roast half a cup of glutinous rice in a dry pan over moderate heat till golden brown. Grind to a fine powder in a spice grinder, or a mortar and pestle. The rice gives it a unique texture, and will keep well in an airtight container. If you decide to use raw vegetables for a condiment, cut apple eggplant into ¼'s, break up cabbage, and cut snake beans into 2 cm lengths, whilst leaving pea eggplants whole. The raw vegetable provides a good balance to the dish. But you don't need them if you're taking to work.

Roast Kingfish with Strawberry and Almond Salad
Believe it or not, the flavour combinations in this salad work quite well. You could alternatively, poach the fish, in a light vegetable stock with aromatics.

1 180gm piece of kingfish or any firm white fleshed fish

Olive oil for cooking

¼ punnet strawberries, quartered

½ cup mint shredded

¼ cup dill tips

2 tbsp pine nuts toasted

100gm crumbled goat's cheese

1 cup watercress

¼ of a red onion finely sliced

1 spring onion finely sliced

1 tbsp black sesame seeds

Dressing:

30ml balsamic vinegar

50ml olive oil

Salt and pepper

Preheat an oven to 200°C. In a hot pan place Kingfish skin down and season with salt and pepper. 

Allow to brown slightly and place in oven. Cook for around 7 minutes, the turn over and leave in oven till cooked. Remove from oven and rest. Mix salad ingredients together. If you're taking to work the next day, keep fish separate so you can reheat. For poaching fish: Get a good quality vegetable stock, such as Campbell's stocks. Heat in a pot, and add a couple of bay leaves, a sprig of thyme, a shallot, some peppercorns and a little salt. Bring to the boil, and then simmer. Add fish and simmer till cooked through, but not falling apart.

I would control my weight, getting down to 100lbs or less. At either end of the spectrum, I feel weight has more to do with our emotions and disconnection from ourselves and others, than it has to do with food.

Weight Loss Studies Can Be Misleading

Recently an article was published in the May, 2012 issue of the IDEA Fitness Journal trade magazine entitled Eating or Fasting For Fat Loss: A controversy Resolved, by Dr. Len Kravitz PhD."
First, let me say I'm a big fan of Dr. Kravitz, however, I do have some questions and comments in regards to his article.

In the study, he had eight men who didn't eat breakfast before they trained but a "normal" breakfast after their workout and then had the same eight men eat a 673-calorie Mediterranean breakfast before training to see which version burned more fat during the day by fasting or not fasting before a workout.

1. There were only eight "trained" men with an average height of 70 inches and weighing 207 pounds. At 5'10 and 207 pounds how were they "trained?" He never mentions their lactate threshold. Why is this important? Although he had the volunteers do a 36-minute cardiovascular workout on a treadmill at 65% of the heart rate reserve, it doesn't tell me everything I need to know. For example, an aerobically trained athlete won't go anaerobic until 90+% of the heart rate reserve so at 65% this kind of athlete wouldn't be perceiving much intensity, therefore the post exercise consumption (EPOC) wouldn't be much since EPOC increases because of intensity. An aerobically trained athlete wouldn't be burning much sugar at that intensity either. I would have liked to have seen this data to help get a picture of what kind of aerobic fitness level these eight subjects had. I don't have many male clients that are 5'10 and 207 pounds.

2. In a chart, Dr. Kravitz demonstrates the post exercise oxygen consumption at the 12-hour and the 24-hour mark. The chart shows the eight subjects burned slightly more calories because they had a higher EPOC and a lower RER (Respiratory Exchange Ratio). As RER rises the body uses more carbohydrate for its energy needs. In essence, the article misleading leads us to believe they were burning more calories but the calories were not from sugar which I will explain better below. I would've liked to see the rest of the math. Although, their EPOC was higher, they did eat 673 more calories for that day. Did the 673 calories offset the higher EPOC? At the end of the day, did the subjects end up in a caloric deficit? Did they lose body fat? In the fasting week, the subjects ate a "normal" breakfast after the workout. The caloric intake for that breakfast was never defined, so we don't know the total daily caloric intake for both groups.

3. According to the chart, there was only a.3 ml O2/kg/min difference between the groups at the 12-hour mark and even less at the 24-hour mark! Although the RER was slightly higher (and I mean slightly) in the fasting group workouts, both of the groups were burning a mixture of carbohydrates and fat. An RER of 0.70 indicates that fat is the predominant fuel source, RER of 0.85 suggests a mix of fat and carbohydrates, and a value of 1.00 or above is indicative of carbohydrate being the predominant fuel source. The RER for the non-fasting week was 8.0 at 12 hours and 8.25 and 24 hours while the fasting group was at 8.25 and 8.75.

Without knowing the rest of the math, I don't disagree that the controversy is "busted" or resolved.

If you have started (or are about to start) a weight loss plan, then the one thing that you'll definitely have to consider at some point or another, is what effect your alcohol consumption will have on you achieving your weight loss goals.

FACT: People who drink as a regular part of their weekly routine are never going to achieve the same results as those who don't. "But, what if I only occasionally have a few drinks?" I hear you ask. " Will this be harmful to my progress?"

To answer this question, let's examine the facts about the impact of alcohol on your body weight and fat loss efforts.

1. Alcohol And Calories

The first problem with regular alcohol consumption as a part of your diet, is the fact that it's a source of empty calories. Empty calories have the same energy content as "regular" calories, but are nutritionally sparse by comparison. They lack the accompanying nutrients such as vitamins, minerals, dietary fiber and antioxidants. 

As they have little/no additional nutritional value, calories from alcohol are mostly stored as fat. Add mixers (which are generally loaded with refined sugar) to the alcohol, and things get even worse!
Mixed drinks can often contain 300 or more calories, which can easily sabotage your fat loss progress. In addition, alcohol can impair your judgement with regards to making smart food choices. How often does a heavy night out end with you craving foods high in salt and processed fats? So you could end up feasting on kebabs, wings, nachos and pizza while drinking as well. On an average night out, you could easily consume in excess of 2000 calories, which is almost the equivalent of half a pound of body fat.

2. Alcohol And Fat Burning

Moving along, the next thing that you'll want to consider, is the effect that alcohol has on your body's fat burning ability. Soon after consuming an alcohol beverage, all fat burning comes to an immediate and abrupt halt.

Remember your body has one purpose: keeping you alive. As alcohol is a toxic substance (and a threat to your survival), your body will immediately start to get rid of it. Other metabolic processes, such as fat burning, will drop down the priority list and it's only after the alcohol has been metabolised and removed from your body, that you can continue burning fat.

3. Alcohol And Recovery

Finally, the last problem with consuming alcohol during your diet is the fact that it will interfere with your recovery ability. If you "reward yourself" with a drink relatively soon after a workout session, the process of rebuilding and repairing your muscle tissue is delayed and dramatically reduced.

Alcohol is one of the most common culprits responsible for slow/stalled progress in the gym. Since your effort and progress in the gym is a vital factor influencing how quickly you achieve the lean physique that you desire, this can really hinder your results.

So there you have the key reasons why regular drinking is not going to help your weight loss efforts - The Alcohol Triple Whammy! Of course, if you want to have one or two drinks, once a week - that's fine, it's not really going to impact things all that much.

However, if every weekend is a big weekend out, or you drink on a daily basis, the process of achieving your weight loss goals may become a very long and frustrating one.

How Clutter Blocks Weight Loss

She stared at me aghast.
"You want me to what?" she cried.

"It's time. You've been talking about it for months...you're ready to deal with it."

I'd been working with Sharon for several months; she'd shed 15kgs at this point.

To her credit she'd kicked a bunch of unresourceful habits. The small changes she'd created were rapidly gaining momentum.

Her home, and the hoarded mess housed within, was her next challenge.

You might be wondering, "What's clutter has to do with weight loss?" Watch and learn, and please, Do Not Do This At Home...

So, I encouraged her to charity anything she no longer absolutely loved.

My personal rule of thumb is simple. If I love it = I keep it. If I love-it-not = the charity shop wins and I give someone else the opportunity to love it.
 
And... "If in doubt, chuck it out."

Her homework was thirty minutes a day.

One drawer at a time.

Building momentum as she went.

Each week, during our call, she'd report back on her progress. Each week, she had a new reason (aka excuse) why she simply couldn't let go of some unloved, un-used item, clutter-y item.

"But I spent half my bonus on it and I MIGHT need it someday!"

"It was a gift...I've got to keep it, don't I?"

"I NEVER use it but it was SUCH a bargain!"

Project De-cluttering Sharon almost de-railed when she came across her box of 'Fat Me' clothes.

The box was bursting full of unflattering elasticised trousers, stretchy tops and baggy jumpers that she'd taken refuge under in her old life, when she was 15kgs heavier.

She no longer liked or needed these outfits because she'd shed the weight. And with her increasing confidence, her tastes had changed. She'd begun to cherish tailored cuts and natural fabrics, and wanted to wear clothes she loved.

"So, Sharon," I asked. "Why don't you want to let these things go?"
She was embarrassed but honest.

"Well, here's the thing. If I put on weight again, I might need them one day. If I fail, and I don't keep the weight off, I might wish I had kept these clothes."

Long pause.

"So, you'd be overweight and p*ssed off with yourself...but at least you'll have those faded elastic-waisted tracky pants?"

Sharp intake of breath.

She laughed as she got it.

In essence, what she saying to her unconscious mind was...

I believe so deeply in my own failure that I'm holding onto physical things that represent that possibility. Every time I see this box of Fat Clothes I will be reminded of my inevitable failure. My unconscious mind knows that in the dark recesses of my wardrobe, there are items that prove I don't believe in my own success.

Before our next session, she'd made the trip to the good folk down at the Salvation Army charity shop.
She shared how it was to say goodbye to the Fat Box.

"It was terrifying. I was letting go of my Plan B. I was saying to the world, I thoroughly believe in my own success and my weight loss."

She had never backed herself in such a solid way before.

Clearly there's more to weight loss than clearing old outfits from your wardrobe. But I am a firm believer that we each need to pay attention to the energy of the stuff that surrounds us.

Hoarding and cluttering is a symptom of something else. Usually a need to control. You're saying, "I don't believe in myself" or "what if I can't survive without it?"

It's doubly-hard to lose weight (make money, be happy, whatever your goal is) if you're sending those kinds of fear-based messages to your unconscious mind.

It is vital to pay attention to what we're telling our unconscious minds when we hoard stuff.
